Cucumber & Avocado Salad – This light summery salad will have you singing with joy. Eat by itself when you are in your first 10 days.
- 1 pound organic heirloom tomatoes
- 1 organic english cucumber
- 1/2 medium organic red onion
- 1/2 organic avocado
- 2 teaspoons EVOO or sunflower oil
- Juice from 1 medium organic lemon
- 1/2 cup organic cilantro
- 1 teaspoon sea salt
- 1 teaspoon black pepper
- 1 clove diced organic garlic
- 2 teaspoon celery salt (or sea salt)
Mixing Your Goods:
Cucumber & Avocado Salad – Chop tomatoes, cucumbers, onion, avocado and cilantro into a large salad bowl. Drizzle with EVOO and lemon juice and add salt and pepper. Enjoy!
